This new large salami is also made entirely from British ex-dairy cows, which had been used for milking before being retired out to pasture towards the end of their life. The meat is therefore much older than is generally used for beef consumption, but it contains a lot of beautiful and deep flavours, which make this ideal for salami production. This is also a much more sustainable product, as this beef is usually largely transported over long distances to continental Europe to be turned into sausages, rather than being used domestically.
This is made from the same recipe as the smaller drier French style sausages in our Bastardo Beef Salami, but as a larger salami of around 65mm diameter, the result is a fresher, slightly more moist slice. The curing and air dried maturation process results in a soft and creamy texture that is complemented with a hint of warm spices.

Whole pieces will have a 2-8 month shelf life (can be extended). We suggest to use within 7 days of opening, if you have a vacuum sealer machine, then you can re-seal the packs to stop the clock. Use by the use by date, or contact us for a shelf life extension. The 250g packs will have 41-43 days shelf life. Sliced 100g and 60g packs will have a 7-8 week life. Use with 3 days once opened.
