Introducing our new Large Beef Salami, crafted entirely from British ex-dairy cows that have been retired from milking and allowed to graze in pastures. This unique approach results in meat that is much older than what is typically used for beef consumption, offering a wealth of beautiful, deep flavours ideal for salami production.

Not only does our Large Beef Salami provide exceptional taste, but it also promotes sustainability. Traditionally, this type of beef is transported over long distances to continental Europe for sausage production, making our locally sourced option a more environmentally friendly choice.

Made using the same recipe as our smaller, drier French-style Bastardo Beef Salami, this larger salami boasts a diameter of approximately 65mm, resulting in slices that are fresher and slightly more moist. The curing and air-dried maturation process creates a soft, creamy texture complemented by hints of warm spices.

Like all our products, our Large Beef Salami is made from British-reared, high-welfare, Red Tractor Assured beef, and is hand-produced by our skilled team. Perfect for dinner parties, charcuterie boards, or to simply stock your fridge with premium British charcuterie, this salami is sure to impress!
