We take our time with our British Coppa, curing it slowly for up to 5 months in our chambers to ensure it develops a rich, fruity flavour and a soft, marbled texture. This gentle aging process avoids overdrying, allowing the meat to mature to perfection.
Our secret? We use retired British breeding sows, which offer a far superior quality of meat for charcuterie. These sows, typically 4-5 years old, provide collars that are not only twice the size of standard pork but also feature double the marbling, making them ideal for creating the best British charcuterie. Traditionally exported to the continent, we’re proud to champion the use of this premium pork right here in the UK.
